CHOC-COCONUT PROTEIN BROWNIES

Dancers need protein to repair & restore their muscles after an afternoon of classes - Try this delicious, & super healthy, treat!!

Ingredients:

1/4 Cup Rolled Oats

1/2 Cup Unsweetened Cocoa Powder

1/2 Cup Chocolate Whey Protein Powder

1/4 Cup Unsweetened Shredded Coconut

1/2 Cup Unsweetened Applesauce

2/3 Cup Unsweetened Coconut Milk (Or Almond Milk)

1 Egg

2 Tablespoon Coconut Oil

1 Tablespoon Honey

1 Teaspoon Vanilla Extract

1/4 Cup Mini Chocolate Chips (+ Extra for Topping)

1/2 Cup Dried Cranberries or Cherries - Optional

Preheat oven to 180°C. Line base and sides of a baking tray with baking paper, allowing a 2cm overhang.

Process oats in a food processor until they resemble the consistency of flour. Add oats, protein powder, shredded coconut & cocoa to a medium bowl & whisk together.

Add applesause, coconut milk, egg, honey & vanilla to a separate bowl & whisk together until smooth. Add this mixture to the dry ingredients & mix together until just combined.

Melt the coconut oil & half of the chocolate chips. Add to the mixture & stir to combine. Stir in cranberries.

Transfer to baking tray & sprinkle the remaining chocolate chips on the top. Bake for 18-22 minutes or until the top has just set.When cool transfer to a cooling rack. Cut into squares.
